Founders Matt and Margaret Vitale have been smoking meat and pleasing crowds for years, having cooked with and learned from the best pitmasters around including Myron Mixon, Chris Lilly, John David Wheeler, Jim Johnson, Mike Mills and many others.
Our Ole Hickory smokers are unmatched in terms of cooking capacity and efficiency, meaning that we can service many customers, quickly. We also finish our ribs over coals, common practice at outdoor events in the United States, including the Big Apple Barbecue Block Party. We think there’s nothing more appetising than seeing slabs of ribs being glazed over fire.
